Vic Cameron, one of our whisky lecturers says: "Washbacks, sometimes called fermenters, are where we undertake the fermentation process in the distillery. We add in the wort and we add in the yeast, and that's where we get the fermentation. Now the vessels can be made from either wood or stainless steel."
