We asked duty manager Daisy Kerby-Smith to tell us more about the beautiful Cotswolds Distillery in England. Here’s what she had to say:

What do you love most about working at the Cotswolds Distillery?
The thing I love most about my job is the team – we have an incredible team of hardworking people who are passionate about our brand and proud of the product we make.

Where are you, and how does your location shape your whisky? 
In the heart of the Cotswolds at the Cotswolds distillery. Our locally grown barley shapes our whisky by bringing a unique, sweet and distinctive floral flavour profile. The brand home is in an Area of Outstanding Natural Beauty, which really comes through in the relaxed feel of our visitor centre, whether visitors are coming for a tour, tasting, or masterclass, or just enjoying our spirits in our café! 

What’s one thing visitors are always surprised to learn on the tour? 
Visitors are often surprised by just how local and low-impact our production is; from treating our wastewater through our own on-site wetland system to partnering with a nearby farmer who feeds our leftover barley mash to his cattle.

How would you describe your house style? 
Approachable: From our Signature whisky, smooth, sweet and easy-drinking, to our wide range of single-malts expressing a variety of cask styles, there’s a spirit for every occasion and every kind of drinker.

Authentic: We’re proud to be fully transparent about how our spirits are made, from grain to glass, staying true to traditional whisky-making while embracing modern techniques along the way.

Carefully crafted: each one of our spirits is put together with the consumer in mind to create something truly enjoyable from first sip to last that represents the Cotswolds. 

What’s your personal favourite dram from the range?
Our Calvados cask-aged whisky from our Hearts and Crafts range. It’s delicate, sweet and tastes like apple crumble!

Best way to enjoy it?
With a couple of drops of water to release the deeper flavours.

Finally, tell us a fun fact about the distillery.
We drew a bottle of whisky from our first ever cask filled and sold it at a charity auction for £3,333 in 2021.
