Why Does This Whisky Taste Like That? Part 1: Can You Really Taste Barley in Whisky?
"Why do Scotch whiskies all taste so different?" It's one of the first questions many curious whisky drinkers ask.
After all, Scotch malt whisky can only be made from three ingredients: malted barley, water and yeast. So how is it that can one whisky taste rich and biscuity, another bright and citrusy and another oily, spicy or nutty?
Most people point to the cask. And they're right... up to a point. But the story starts much earlier than that. It begins with barley.
Why do we malt barley?
At first glance, malting seems like an extra step. Why not just use barley straight from the field? Barley is full of starch, which is exactly what a distillery needs. The problem is that yeast can't ferment starch into alcohol. Yeast can only ferment sugar. So the starch first has to be converted into sugar.
This is where malting comes in. During malting, barley is soaked in water and allowed to begin germinating. As the grain starts to grow, it naturally produces enzymes that unlock its stored starch and convert it into fermentable sugars. Before the barley can continue growing, the process is stopped by carefully drying it.
The result is malted barley: packed with the enzymes needed later during mashing to produce the sugary liquid that yeast will transform into alcohol. Without malting, there would be no fermentation. And without fermentation, there would be no whisky.
So why do some whiskies use unmalted barley?
If malting is so important, why would anyone use unmalted barley? This is where Scotch grain whisky takes a different approach.
Unlike single malt Scotch whisky, grain whisky can also include cereals such as wheat, maize and unmalted barley. These grains are generally more economical and tend to produce a lighter, cleaner spirit.
However, there's a catch. Unmalted grains don't provide enough active enzymes to convert their own starches into sugar. That's why grain distillers still include a proportion of malted barley. Those enzymes do the hard work for all the grains in the mash. Even in grain whisky, malted barley quietly plays a crucial role.
Can you actually taste the barley?
This is where things become more controversial. For many years, conventional wisdom suggested that barley's job was simply to provide alcohol. Once fermentation, distillation and years of maturation had done their work, any influence from the barley itself was thought to have largely disappeared.
Today, that assumption is being challenged. Distilleries including Bruichladdich and Arbikie have invested heavily in researching barley provenance, asking whether different barley varieties or different growing locations can influence flavour in the finished spirit.
The science is still evolving and opinions across the industry remain divided. But it's opened up one of the most fascinating conversations in modern whisky production. Perhaps barley contributes more than simply alcohol after all.

It's tempting to think that flavour begins when spirit enters a cask. In reality, every stage of production leaves its mark. The choice of barley. Whether it's malted. Which variety is grown. Even where it's grown. These decisions may seem small in isolation, but together they help explain why no two Scotch whiskies ever taste quite the same. And this is only the beginning...
