Why Does This Whisky Taste Like That? Part 2: Why Doesn't Every Smoky Whisky Taste the Same?
"If peat is just smoke, why can one whisky remind you of a bonfire while another tastes of seaweed, barbecue or even sticking plasters?" For many people, smoky whisky is Scotch's signature flavour. Some love it. Others can't stand it.
But here's something that often surprises newcomers: smoky whisky doesn't actually taste of smoke. Not really. Instead, it tastes of hundreds of flavour compounds created long before the spirit ever reaches the still.
Smoke isn't an ingredient
Unlike malted barley, water and yeast, peat isn't one of the three raw materials required to make Scotch malt whisky. Peat is partially decomposed plant material that has accumulated over thousands of years in waterlogged bogs. Over time, mosses, grasses and other vegetation break down slowly, creating a dense fuel that has been used in Scotland for centuries.
In whisky production, peat is burned during the malting process. As the newly germinated barley is dried, peat smoke (or peat reek) passes through the grain, depositing a family of compounds known as phenols.
Some of these phenolic compounds remain through production, although their concentration and character change throughout the process. The remaining phenols are responsible for the smoky, medicinal, earthy and maritime flavours many whisky lovers recognise instantly. The smoke isn't added later. It's woven into the barley before whisky has even begun to exist.
So why don't all smoky whiskies taste alike?
Here's where things become really interesting. Imagine making coffee - two people can use exactly the same beans but brew them completely differently. The same idea applies to peated whisky.
Laphroaig and Ardbeg both use heavily peated malt, yet very few drinkers would mistake one for the other. That's because peat is only one influence. Fermentation, still shape, reflux, spirit cut points and cask maturation all continue shaping the whisky after the smoke has entered the grain. Peat starts the conversation, the distillery decides how it ends.
Does more peat always mean more flavour?
You may have seen bottles proudly displaying a PPM number. PPM stands for parts per million and measures the level of phenols in the malted barley after malting. It's tempting to think that higher automatically means smokier. Reality is more complicated. Some phenols are lost during distillation. Others evolve during maturation. Different phenols create different aromas. So while PPM is useful, it doesn't tell the whole story.
Bruichladdich's famous Octomore has released whiskies peated to more than 300 ppm, making it one of the most heavily peated Scotch whiskies ever produced. Yet intensity isn't simply a numbers game. Texture, sweetness, fruitiness and cask influence all shape how that smoke is experienced in the glass.
Four whiskies, four very different styles of smoke
If you're curious about exploring peat, these bottles demonstrate just how varied smoky Scotch can be.

Laphroaig: Bold, medicinal and unmistakably coastal, often bringing notes of iodine, seaweed and antiseptic.
Ardbeg: Equally smoky, but richer and oilier, balancing intense peat with remarkable depth and sweetness.
Ledaig: Produced on the Isle of Mull, Ledaig combines robust smoke with black pepper, spice and a rugged maritime character.
Highland Park: A gentler introduction to peat, offering soft heathery smoke wrapped around honeyed sweetness and subtle spice.
Taste them side by side and you'll quickly discover that "smoky" is only the beginning of the story.
The real lesson
People often divide whisky into two camps: peated and unpeated. But that's rather like describing wine as simply "red" or "white." Once you begin paying attention, you'll discover an extraordinary range of smoky styles, each shaped by dozens of decisions made throughout production.
