Why Does This Whisky Taste Like That? Part 3: Where Do Fruity Whisky Flavours Really Come From?

Ask someone where whisky gets its flavour and there's a good chance they'll point to the cask. After all, Scotch whisky spends at least three years maturing in oak, gradually developing its colour, aroma and complexity.

But here's something that surprises many curious newcomers to whisky: some of the fruitiest flavours in Scotch begin during fermentation, long before the spirit ever enters a cask. 

Whisky's most overlooked stage?

Fermentation rarely gets the attention given to peat, casks or stills. There's no dramatic fire, no towering copper stills and no romantic warehouse filled with ageing casks. Yet it is one of the most important stages in creating a whisky's flavour.

At this point, there isn't a drop of whisky yet. Instead, there's a sweet, sugary liquid called wort, resting in a large vessel known as a washback, where yeast begins the remarkable process of fermentation.

As yeast consumes the sugars produced during mashing, it creates alcohol. But alcohol isn't the only thing it produces. Along the way, yeast also generates hundreds of flavour compounds, many of which contribute fruity, floral and spicy aromas that can still be detected in the mature whisky years later.

Far more than simply producing alcohol, fermentation is where a whisky's personality really begins to emerge.

The important work of yeast

For generations, distilleries selected yeast for one main reason: efficiency. The more alcohol it produced, the better. Today, many newer (and often therefore smaller) producers are beginning to ask a different question: what if yeasts were selected primarily for their flavour contribution?

It's an area of growing interest across the industry with distilleries experimenting with new yeast strains, heritage yeasts and mixed fermentations. Rather than chasing higher yields, they're searching for new flavours, new aromas and ultimately more distinctive whiskies.

Why time matters

Fermentation doesn't stop once alcohol has been produced. The longer it continues, the more opportunities there are for additional flavour compounds to develop. In general, shorter fermentations tend to produce a heavier, cereal-forward spirit. Longer fermentations see more fruity, floral and estery characteristics start to appear. 

Many distilleries ferment for around two days. Others deliberately leave their wort fermenting for much longer, believing the extra time creates a more complex and elegant spirit. Of course, time also brings challenges.

As yeast activity slows, bacteria begin to play a greater role. While carefully managed bacterial activity can add desirable complexity, it also requires close control to prevent unwanted flavours from developing. Like so much in whisky making, it's a balancing act.

Four distilleries exploring fermentation

If you'd like to see fermentation's influence in action, these distilleries offer fascinating examples.

Holyrood Distillery: One of Scotland's most experimental distilleries, Holyrood has explored different yeast strains and extended fermentations through its new make spirit, demonstrating just how much flavour can exist before maturation has even begun.

GlenAllachie: Known for fermentation times of more than 160 hours, GlenAllachie believes patience at this stage contributes to the fruity, complex character found in its spirit.

Ben Nevis: Weighty, robust and unmistakably individual, Ben Nevis shows how fermentation can contribute richness and texture alongside fruit.

Springbank: One of Scotland's most traditional distilleries, Springbank's production methods include relatively long fermentations that help build the layered, oily character for which the distillery is renowned.

The real lesson

The next time you discover notes of green apple, pear or tropical fruit in a glass of Scotch, don't automatically thank the cask. Some of those flavours may have started life days after mashing, quietly created by millions of hardworking yeast cells inside a washback. Long before oak had any influence. It's another reminder that whisky flavour is built, layer by layer, throughout the entire production process.
